Starters:

Vegetable & Fruit Salad:
Fruits and vegetables mixed together;
Avocado, Shrimps Salad & Walnuts:
Avocado tartare with shrimps and grilled walnuts on top;
Vegetables Tabouleh:
Salad made mostly of finely chopped parsley, with tomatoes, mint, onion, bulgur (soaked, not cooked), and seasoned with olive oil, lemon juice, salt and sweet pepper.
Eggplants with Tomatoes sauce & Mozzarella:
Sliced eggplants with tomatoes sauce and mozzarella on top cooked in the oven.

Main Courses:

Tanjia:
It’s a typical Moroccan way of cooking in an urn-shaped terra cotta vessel. The stew cooked in the pot is prepared with lamb shank, one or more candied lemons, a few spices, garlic, and water then covered and placed in the embers or the oven;
Couscous Royale:
Typical Moroccan meal made of semoule and a mix of lamb, chicken, beef and vegetables;
Poultry Pastilla:
Poultry pastilla is traditionally made with squab (fledgling pigeons). It combines sweet and salty flavors; crisp layers of the crêpe-like werqa dough, savory meat slow-cooked in broth and spices and then shredded, and a crunchy layer of toasted and ground almonds, cinnamon, and sugar;
Seafood Pastilla:
Seafood pastilla is traditionally made with fish and other seafood, in addition to vermicelli. Unlike poultry pastilla, seafood pastilla is not sweet, but spicy;
Vegetables/ Cheese Pastilla:
Vegetable pastilla is traditionally made with vegetables and goat cheese inside;
Kefta Pastilla:
Kefta pastilla is traditionally made with beef;

Main Courses:

Crepes banana and almonds:
Home made crepes with banana and almonds with a sprinkle of cacao on top;
Fruit cake:
Home made fruit cake with seasonal fruits accompanied with ice cream or cream;
Pastilla Malakia:
This pastilla is also made of warka and a milky cream put between the sheets. The Jowhara is flavored with orange flower water and decorated with cinnamon and sugar.
